the process of grilling the sardines

fresh (i hope!) sardines were put on a grill, coals were brought over from a big fire in the back part of the marketplace and the grill was put on the hot coals. periodically the grills would be turned and when they were ready, they were brought to a table where the freshly grilled sardines were heaped on plates.  when the food got to our table, i noticed there were no eating utensils, so i watched for a minute and saw that everyone was just digging in with their hands, so i did, too! i ate the first sardine completely (it was very well grilled and crispy) and the guy next to me looked a little shocked and asked me if i had eaten the head, too.  hee!  yes, i had!!

so then i watched people some more and they separated the meat from the bones – so much more civilized!  besides, i couldn’t eat the other fish whole because they weren’t crispy enuf, so i had to do the less savage method.  oh well, it tasted good both ways! 🙂

will publish a series of photos of the grilling process i just described.ImageImage
